Sweet & Spicy Pork Bowl

In my continued series of food that is both stupidly easy and cheap as hell, I present to you, the Sweet & Spicy Pork Bowl. 

This is a great way to use those big packs of pork chops from the grocery that are always on sale, and honestly, you probably have the majority of the ingredients in your fridge and pantry, already. 

It’s a better-than-take-out situation that has my kids, who swear they hate pork chops, grabbing seconds. 

What You’ll Need:
2 lbs of Boneless Pork Chops, cubed
5 Sweet Mini Peppers, sliced
Salt & Pepper
Garlic Powder
Onion Powder
Corn Starch
Oil (I prefer Avocado)

Sauce:
1/2 cup Honey
1/2 cup Chicken Broth
3 tbsp Balsamic Vinegar
3 tbsp Soy Sauce
1 tbsp Garlic, minced
1 tsp Red Pepper Flakes

1. In a bowl, toss cubed pork with salt, pepper, garlic powder, onion powder, and corn starch to lightly coat. 
2. Heat oil in pan, and cook pork until cooked through and browned on all sides, remove from pan and set aside. 
3. In a bowl, whisk together honey, chicken broth, balsamic, soy sauce, garlic, and red pepper flakes. Set aside.
4. In same pan that you cooked pork, add a touch more oil and sauté sliced sweet peppers for about a minute, and then re-introduce the pork, and stir to mix. 
5. Pour sauce over the pork and peppers, bringing to a boil over high heat, allowing the sauce to thicken slightly, about 5 minutes. 
6. Serve immediately over rice.
