Sure, sure. Bruschetta is already a summer food, with the bread, tomato stuff, basil, all very light and good.
But, add in some goat cheese and fruit…

This strawberry and goat cheese bruschetta comes together in just six ingredients.
Strawberries, goat cheese, sugar, basil, balsamic glaze, and a baguette.
First things first, cut up those strawberries.
Cut them up small enough to pile on a small slice of bread.
And then toss the cut up strawberries with sugar, so they make a really lovely quick syrupy treat.
Oh hey, I’m just here cutting up basil I grew in my garden like the earth goddess I am now. Carry on.
Slice the baguette on a diagonal, because your goal is the biggest, flattest surface area available.
Literally any baguette will do, think something big enough to give you a couple bites before it’s gone. I found this ciabatta baguette at Trader Joe’s and it was pretty fantastic.
Put the slices under the broiler for about 5 minutes.
Keep an eye on them, you just want them toasted up enough for a crunch, somewhere between bread and a crouton.
Once that’s done, it’s so quick and easy to put together and serve to a crowd.
Spread on the goat cheese, top with strawberries, drizzle with some balsamic vinegar glaze, and then some fresh basil.
Not only is this quick and easy, the whole dish cost me under $12 dollars.
Summer Strawberry & Goat Cheese Bruschetta
Rethink traditional bruschetta with this sweet and tangy summer favorite!
Ingredients
- 1 Baguette, sliced
- 1 quart of Strawberries, sliced
- 5 oz Goat Cheese
- 4 tbsp Sugar
- 5 leaves Basil, chopped
- Balsamic Vinaigrette Glaze
Instructions
- Set oven to broil at 500 degrees.
- Clean and slice the strawberries, and mix with sugar. Set aside.
- Slice baguettes on the diagonal, and place slices under the broiler for around 5 minutes, until toasted around the edges.
- Spread goat cheese on toasted baguette slice, and then top with sugary strawberries, drizzle with balsamic glaze, and then sprinkle with shredded basil.
- Serve cold.
